These pigs, which are native to the Iberian Peninsula, have certain genetic characteristics that provide the pieces with a succulence and an incomparable flavour. It is important to bear in mind that, in order to be able to say that a ham is&nbsp;<strong><em>ib\u00e9rico<\/em><\/strong>, it must have a minimum of 50% purity of this breed.<\/p>\n\n\n\n<p>In some cases, however, belonging to the Iberian breed is not enough. Depending on the category to which the ham will belong, the pig will need to go through its last phase of growth in a unique ecosystem called&nbsp;<a href=\"https:\/\/moniberic.com\/en\/what-is-a-dehesa\/\"><strong><em><u>dehesa<\/u><\/em><\/strong><\/a>, full of trees that produce acorns, which will become the basis of the pig\u2019s diet. This will bring unique flavours and aromas to the ham.<\/p>\n\n\n\n<p>If, in addition, we have the&nbsp;<strong>experience&nbsp;<\/strong>of our experts and producers, who will treat the product with care and delicacy, we will obtain an Iberian ham of optimum quality.<\/p>\n\n\n\n<p>It has been two years since the new&nbsp;<strong>regulation about&nbsp;<em>jam\u00f3n ib\u00e9rico&nbsp;<\/em><\/strong>was approved. We will see which color corresponds to each type of&nbsp;<em>jam\u00f3n<\/em>, but before that I would like to explain you the three aspects that differentiate each&nbsp;<em>jam\u00f3n<\/em>:<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"300\" height=\"273\" src=\"https:\/\/moniberic.com\/wp-content\/uploads\/2022\/08\/Sin-titulo-1_Mesa-de-trabajo-1-300x273-1.jpg\" alt=\"\" class=\"wp-image-7451\" title=\"Feeding and breed jam\u00f3n ib\u00e9rico\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>What does it eat?<\/strong>The&nbsp;<strong>diet of the pig&nbsp;<\/strong>is one of the aspects that makes the greatest difference in the final result of the product. An animal that is fed on acorns and natural pastures while it is strolling along a&nbsp;<em>dehesa<\/em>, is different from one that is fed on feedstuffs in a farm. Their diet provides them with different aspects that we will be able to appreciate on the&nbsp;<em>jam\u00f3n<\/em>.<\/li>\n<\/ol>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li><strong>Which breed does it come from?<\/strong>We can find pigs that belong to the pure&nbsp;<em>ib\u00e9rico<\/em>breed (mother and father 100%&nbsp;<em>ib\u00e9rico<\/em>) and pigs that come from crossbred animals (mother 100%&nbsp;<em>ib\u00e9rica&nbsp;<\/em>and father Duroc). Duroc is the only breed that is used in crossbreeds with&nbsp;<em>ib\u00e9rico<\/em>. It is a type of breed included in the group of white pigs (those which are not&nbsp;<em>ib\u00e9rico<\/em>).<\/li>\n<\/ol>\n\n\n\n<ol start=\"3\" class=\"wp-block-list\">\n<li><strong>Do they live in the open or in farms?<\/strong>The way they live is usually linked to the type of diet they receive. When a pig is in the open in the&nbsp;<em>dehesas<\/em>, in which we call extensive grazing, it is usually fed on acorns and pastures. However, if it is in a farm \u2013 intensive farming \u2013 is normally fed on cereal feeding stuff or legumes. We can also find farms that have an open area and in which pigs are fed on feedingstuff and some additional natural pastures.<\/li>\n<\/ol>\n\n\n\n<p>These three variables will be useful to understand the types of&nbsp;<em>jam\u00f3n ib\u00e9rico<\/em>, since according to their combination a pig will belong to one category or another:<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Black_Seal_Jamon_de_Bellota_100_Iberico\"><\/span><strong>Black Seal, Jam\u00f3n de Bellota 100% Ib\u00e9rico<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>These&nbsp;<em>jamones&nbsp;<\/em>come from pigs of&nbsp;<strong>100%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed&nbsp;<\/strong>that have basically been fed on&nbsp;<strong>acorn<\/strong>,&nbsp;<strong>pastures&nbsp;<\/strong>and&nbsp;<strong>natural resources&nbsp;<\/strong>from the&nbsp;<strong><em>dehesa&nbsp;<\/em><\/strong>in the&nbsp;<strong>open air<\/strong>. This is the highest category of&nbsp;<em>jam\u00f3n<\/em>.<\/p>\n\n\n\n<p><strong>Red Seal, Jam\u00f3n de Bellota Ib\u00e9rico<\/strong><\/p>\n\n\n\n<p>This&nbsp;<strong>Seal&nbsp;<\/strong>tells us that the&nbsp;<em>jam\u00f3n&nbsp;<\/em>comes from an animal that has been fed on acorn and natural pastures in a&nbsp;<em>dehesa&nbsp;<\/em>in the open. The difference with the previous one is that these are crossbred pigs, they do not have the purity of&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed. They can be 75%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed or 50%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed. In order to know the exact percentage of breed we will have to read its label, where it should be indicated. That is why in this group we will find&nbsp;<em>jam\u00f3n de bellota ib\u00e9rico&nbsp;<\/em>(75%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed) or&nbsp;<em>jam\u00f3n de bellota ib\u00e9rico&nbsp;<\/em>(50%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Green_Seal_Jamon_de_Cebo_de_Campo_Iberico\"><\/span><strong>Green Seal, Jam\u00f3n de Cebo de Campo Ib\u00e9rico<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>The green one corresponds to those&nbsp;<em>jamones&nbsp;<\/em>that come from a pig mainly fed on cereal feeding stuff and legumes, and that sometimes receives additional natural pastures. Its rearing can be done both in extensive or intensive exploitation, provided that they are in the open.<\/p>\n\n\n\n<p>With regard to the breed, it can be&nbsp;<strong>100%&nbsp;<em>ib\u00e9rica<\/em><\/strong>,&nbsp;<strong>75%&nbsp;<em>ib\u00e9rica&nbsp;<\/em><\/strong>or&nbsp;<strong>50%&nbsp;<em>ib\u00e9rica<\/em><\/strong>. In order to verify the breed percentage, as in the previous case, we will have to look at the label.<\/p>\n\n\n\n<p>Included in the&nbsp;<strong>green Seal&nbsp;<\/strong>we can find different types of&nbsp;<em>jam\u00f3n<\/em>:&nbsp;<em>Jam\u00f3n de Cebo de Campo&nbsp;<\/em>100%&nbsp;<em>Ib\u00e9<\/em><em>rico<\/em>,&nbsp;<em>Jam\u00f3n de Cebo de Campo Ib\u00e9<\/em><em>rico&nbsp;<\/em>(75%<em>Ib\u00e9rico&nbsp;<\/em>breed) and&nbsp;<em>Jam\u00f3n de Cebo de Campo Ib\u00e9<\/em><em>rico&nbsp;<\/em>(75%&nbsp;<em>Ib\u00e9rico&nbsp;<\/em>breed).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"White_Seal_Jamon_de_Cebo_Iberico\"><\/span><strong>White Seal, Jam\u00f3n de Cebo Ib\u00e9rico<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>This&nbsp;<strong>Seal&nbsp;<\/strong>identifies the&nbsp;<em>jamones&nbsp;<\/em>that come from&nbsp;<strong>pigs fed on natural pastures&nbsp;<\/strong>in&nbsp;<strong>farms (indoors)<\/strong>.<\/p>\n\n\n\n<p>As in the&nbsp;<strong>green&nbsp;<\/strong>and the&nbsp;<strong>red&nbsp;<\/strong>one, in order to know its breed, we will have to look at the label. This&nbsp;<strong>Seal&nbsp;<\/strong>includes&nbsp;<em>jamones&nbsp;<\/em>100%&nbsp;<em>ib\u00e9ricos<\/em>, 75%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed, 50%&nbsp;<em>ib\u00e9rico&nbsp;<\/em>breed.<\/p>\n\n\n\n<p>In the white group we encompass:&nbsp;<em>Jam\u00f3<\/em><em>n de Cebo&nbsp;<\/em>100%&nbsp;<em>Ib\u00e9<\/em><em>rico<\/em>,&nbsp;<em>Jam\u00f3n de Cebo Ib\u00e9<\/em><em>rico&nbsp;<\/em>(75%&nbsp;<em>Ib\u00e9rico&nbsp;<\/em>breed) and&nbsp;<em>Jam\u00f3n de Cebo Ib\u00e9<\/em><em>rico&nbsp;<\/em>(50%&nbsp;<em>Ib\u00e9rico&nbsp;<\/em>breed)<\/p>\n\n\n\n<p>It is important that when you buy a&nbsp;<em>jam\u00f3n ib\u00e9rico&nbsp;<\/em>you look at the&nbsp;<strong>type and colour of the&nbsp;<\/strong>&nbsp;<strong>Seal&nbsp;<\/strong>and its label, not all the&nbsp;<em><a href=\"http:\/\/www.jamonestomaslopez.com\/jamones-y-paletas\/\">jamones ib\u00e9rico<\/a>&nbsp;<\/em>are equal and these colours will help you to make a decision.&nbsp;&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The&nbsp;jam\u00f3n ib\u00e9rico&nbsp;is one of the jewels of our gastronomy that can be obtained from&nbsp;ib\u00e9rico&nbsp;pigs.
