For the consumer, it guarantees a constant level of quality and specific characteristics.<\/p>\n\n\n\n<p>One of the four Denominations of Origin for Iberian ham in Spain is Guijuelo. Let\u2019s discover the characteristics of the ham produced in this area.<\/p>\n\n\n\n<p>The hams and shoulders come from pigs of the Iberian pig breed or from the crossing of 75% of Iberian blood and 25% of the Duroc-Jersey breed.<\/p>\n\n\n\n<p>According to the feeding of the pigs it is distinguished:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Acorn-fed or fattened pig: A pig intended for slaughter immediately after use of the fattening area.<\/li>\n\n\n\n<li>Cebo de campopork or pork finished in cebo de campo: It is that which, after reaching a certain weight in the mountains, is increased before slaughter, by a maximum of 30%, by means of a feedstuff authorised by the Regulatory Council.<\/li>\n\n\n\n<li>Pigs in feedingstuff or finished in feedingstuff: Pigs which, after reaching a certain weight either in the mountains or with feedingstuffs, are increased by more than 30% before slaughter by means of a feedingstuff authorised by the Regulatory Council.<\/li>\n<\/ul>\n\n\n\n<p><strong><em>Characteristics of hams and shoulders<\/em><\/strong><\/p>\n\n\n\n<p>In general, the protected hams and shoulders are elongated and stylised, being shaped and preserving the hoof. It weighs a minimum of 4,5 kg for hams and 3,5 kg for shoulders. Its consistency is firm in the muscle masses, and slightly oily and depressible in the areas of fatty tissue.<\/p>\n\n\n\n<p>Outwardly, the fungal flora stands out, white, bluish grey, dark or violet in colour. When cut, it appears pink to purplish red, with a shiny appearance and veins of fatty tissue and fat infiltrated in the muscle mass. The meat has a delicate, sweet or slightly salty taste, with a low fibrous consistency and high friability.<\/p>\n\n\n\n<p>The aroma is pleasant and characteristic. The fat is unctuous, depending on the percentage of feeding with acorns, bright yellowish-white, aromatic and pleasant flavor, not rancid.<\/p>\n\n\n\n<p><strong><em>Geographical area<\/em><\/strong><\/p>\n\n\n\n<p>The defined pig production area comprises several areas rich in holm oak and cork oak pastures:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Castile and Leon: the regions of Vitigudino, Ledesma, Salamanca, Fuente de San Esteban, Alba de Tormes, Ciudad Rodrigo, La Sierra and Pe\u00f1aranda de Bracamonte (Salamanca); Piedrahita-Barco, Ar\u00e9valo and&nbsp;\u00c1vila (\u00c1vila); Duero Bajo and Sayago (Zamora) and the region of Cu\u00e9llar in Segovia.<\/li>\n\n\n\n<li>Extremadura: Counties of C\u00e1ceres, Trujillo, Brozas, Valencia de Alc\u00e1ntara, Logros\u00e1n, Navalmoral de la Mata, Jara\u00edz de la Vera, Plasencia, Hervas and Coria (C\u00e1ceres); Counties of Alburquerque, M\u00e9rida, Don Benito, Puebla de Alcocer, Herrera del Duque, Badajoz, Almendralejo, Castuera, Olivenza, Jerez de los Caballeros, Llerena and Azuaga (Badajoz).<\/li>\n\n\n\n<li>Andalusia: LaSierra Norte region in Seville; the Pedroches, La Sierra and Campi\u00f1a Baja (C\u00f3rdoba), La Sierra, And\u00e9valo Occidentar and And\u00e9valo Oriental (Huelva) regions.<\/li>\n\n\n\n<li>Castilla-La Mancha: The regions of Montes Norte and Montes Sur in Ciudad Real, and the regions of Talavera and La Jara in Toledo.<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>The production area comprises 77 municipalities in the southeast of Salamanca.<\/p>\n\n\n\n<p>This information can help you to decide when buying an Iberian ham with a specific denomination of origin, as it varies the flavour and its characteristics.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As we saidin the previous post, a Denomination of Origin is a classification that is used to legally protect some products such as ham, which includes the area of production and the traditional methods used in it.
