The 100% Iberian Bellota Shoulder represents the highest Iberian purity. The pig is raised in freedom among holm oaks, cork oaks and other species typical of the best dehesas(natural pastures with trees that produce acorns), and its exquisite diet is based on natural pastures, acorns and other foods characteristic of the ecosystem in which it lives. This gives it a high differential value and optimal quality that makes this product the highest range of Iberian shoulders.
As a result of the pig’s diet and relaxed lifestyle, the product has a high level of fat infiltration in the meat, which allows us to enjoy an excellent juiciness, as well as an exceptional flavour and intensity. Suitable for:
Ideal palette to taste on a plate or to eat with any type of bread. One of the best flavours we can find in our gastronomy.
Consumption:
Consume it at a temperature close to 21ºC. Never consume it ata product temperature lower than 14ºC or higher than 25ºC, as this would alter its organoleptic properties.
If the product is packaged, take it out of the refrigerator 2 hours before its consumption in order to achieve the ideal temperature of 21ºC. Open the package 15 minutes before its consumption to allow the product to air out.
Preservation:
Always store it in a cool and dry place, at temperatures that do not exceed 15ºC. After cutting, it is advisable to cover the cut with the grease from the palette itself and place a lint-free cloth on top. If the product is vacuum-packed, it should be kept in the refrigerator at a temperature between 1ºC and 5ºC.
