- 1 kg of pumpkin
- 1 onion
- 2 carrots
- 1 medium potato
- 1 liter of vegetable broth
- 100 ml of liquid cream (optional)
- Extra virgin olive oil
- Salt and pepper to taste
- 80 g of Moniberic Iberian ham
Step by step
- Peel and cut the pumpkin, onion, carrots and potato into small pieces.
- Sauté the vegetables in a pot with a dash of extra virgin olive oil.
- Add the vegetable broth and let it cook for 20-25 minutes, until everything is tender.
- Blend the vegetables until you get a smooth, creamy consistency. If you prefer a creamier consistency, add a little single cream.
- For the special touch: Place the Iberian ham slices on a baking tray lined with baking paper and bake at 180°C for about 8-10 minutes, until crispy.
- Serve the cream hot and decorate with the crispy Iberian ham on top.
