Today we present the second in the series of original and creative ham recipes by chef Clara Saura for your special occasions…
Before starting, you have to be clear about which Iberian ham you are going to use, because each category has its characteristic flavor, due to the months of curing and the diet of the pig from which the piece comes. In our previous posts we teach you everything related to ham. and its elaboration.
We start with a succulent and healthy ham recipe:
Peas with Iberian
Ingredients:
- 6 slices of cured ham.
- 30g. Iberian fat fat
- 24 fresh mint leaves.
- 900g. of peas.
- 60 ml. of ham broth.
- 3 small onions.
- Olive oil.
- Salt.
Technical support:
Knife, frying pan, pot, bowl.
Elaboration:
Cut the ham and its fat into small pieces.
Sauté the onion with the olive oil and the Iberian fat. When the onion is already transparent, add the peas and sauté for 4 or 5 minutes.
Add the mint leaves and broth. Let it cook for 4 minutes with the pot covered.
Turn off the heat and let it rest with the pot covered.
Adjust salt and serve in the bowl.

Suggestions to keep in mind:
To make the ham broth: cook the bone in water without any other addition, thus obtaining a broth with a pronounced flavor. You can also make the broth by adding vegetables such as carrot, leek, celery, onion,… to your taste. In our stores we sell bones, and if you have bought a whole piece from us we will chop it up for you free of charge.
For the pieces of ham you have two options, either cut the slices that you have purchased or buy it directly cut into pieces into shavings, cubes or pellets, (in our stores we always have shavings, pellets and cubes so that our customers can choose the best format they want. )
When you have finished the recipe, before serving we advise tasting it to make sure it is at its right level of salt, and if not, we have time to rectify it, the good cook tests the dishes before serving them.
