Melon with Iberian acorn-fed ham.

Ingredients:

Preparation:

With a pastry cutter or Parisian spoon, make 8 small balls of melon.
Roll up the slices of Iberian acorn-fed ham, which should be long and not too wide.
Finally, assemble the skewers alternating, first the mint, then the Iberian ham and finally the melon, so that the melon is at the base of the skewer, as you can see in the photograph.
Decorate with some chopped and toasted pistachios and some small mint leaves, and serve.

*We have chosen Iberian acorn-fed ham for its flavour, which goes perfectly with melon, although any combination is valid.

Some suggestions:

Do not assemble the skewers too long in advance as the ham will get wet with the melon water.
To keep the mint, we recommend keeping it in the freezer with absorbent paper.
A trick to make the most of the melon pulp, cut the melon in half, make the balls and keep them in the melon, and if there is any left over you can mix them with watermelon balls and you have a tasty and refreshing dessert.
