{"id":7263,"date":"2018-05-17T18:05:00","date_gmt":"2018-05-17T17:05:00","guid":{"rendered":"https:\/\/moniberic.com\/que-significan-los-precintos-de-colores-del-jamon-iberico\/"},"modified":"2025-10-16T12:19:04","modified_gmt":"2025-10-16T11:19:04","slug":"lelaboracio-del-pernil-etapa-2-rentat-i-assentament","status":"publish","type":"post","link":"https:\/\/moniberic.com\/ca\/lelaboracio-del-pernil-etapa-2-rentat-i-assentament\/","title":{"rendered":"L\u2019Elaboraci\u00f3 del Pernil: Etapa 2: Rentat i assentament"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p><strong>EL SECRET PER TENIR UNA EXCEL\u00b7LENT PE\u00c7A DE PERNIL IB\u00c8RIC \u00c9S:<\/strong><\/p>\n\n\n\n<p><strong>LA SEVA ELABORACI\u00d3<\/strong><\/p>\n\n\n\n<p>Si unim una mat\u00e8ria primera d\u2019excel\u00b7lent qualitat, amb un proc\u00e9s d\u2019elaboraci\u00f3 excepcional, el resultat no pot ser altre que una joia de la gastronomia nacional: el pernil Ib\u00e8ric<\/p>\n\n\n\n<p>Aquest proc\u00e9s, resulta de la sumat\u00f2ria de l\u2019experi\u00e8ncia de generacions de fam\u00edlies *jamoneras, que posen tot la seva saber, cura i dedicaci\u00f3, per portar una exquisida pe\u00e7a de pernil a la teva llar.<\/p>\n\n\n\n<p>En aquesta edici\u00f3, parlarem sobre la segona etapa involucrada en el proc\u00e9s d\u2019elaboraci\u00f3 del pernil ib\u00e8ric: El rentat i l\u2019assentament de la&nbsp;<a href=\"https:\/\/moniberic.com\/ca\/pernil\">pe\u00e7a de pernil<\/a>.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">ETAPA 2: RENTAT I ASSENTAMENT<\/h5>\n\n\n\n<p>Etapa 1-&nbsp;La sala\u00f3: En el post anterior parlem del proc\u00e9s de sala\u00f3, on la pe\u00e7a de pernil, \u00e9s coberta completament amb sal en condicions clim\u00e0ticament controlades. En aquest processo el pernil comen\u00e7a a desenvolupar el seu color i la seva inconfusible aroma.Una vegada finalitzada la sala\u00f3, es renten les peces en aigua temperada per eliminar la sal adherida. En finalitzar el rentat es modelen i es perfilen els pernils un a un.<\/p>\n\n\n\n<p>Finalment es pengen d\u2019una corda i s\u2019introdueixen en una c\u00e0mera per comen\u00e7ar l\u2019equilibrat sal\u00ed o assentament. Les peces han d\u2019anar eliminant la humitat lentament, fins a aconseguir la correcta difusi\u00f3 de la sal entre les diferents masses musculars del pernil.<\/p>\n\n\n\n<p>Aquest proc\u00e9s d\u2019assentament t\u00e9 lloc a temperatures controlades d\u2019entre 0\u00ba i 6\u00ba C i d\u2019un 80% a un 90% d\u2019humitat relativa.
