En vam analitzar els tres primers, i a&nbsp;continuaci\u00f3&nbsp;us en detallem la resta&nbsp;per&nbsp;ajudar-vos a&nbsp;fer&nbsp;la&nbsp;millor&nbsp;elecci\u00f3.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Com&nbsp;ja&nbsp;vam&nbsp;dir&nbsp;en&nbsp;post&nbsp;anterior, el primer i&nbsp;m\u00e9s&nbsp;important&nbsp;\u00e9s&nbsp;saber en&nbsp;quant&nbsp;temps&nbsp;aproximadament&nbsp;consumirem&nbsp;la&nbsp;pe\u00e7a. No&nbsp;\u00e9s&nbsp;el&nbsp;mateix&nbsp;comprar un pernil per&nbsp;a consumir-lo en&nbsp;el&nbsp;mateix&nbsp;dia&nbsp;(la&nbsp;curaci\u00f3&nbsp;ha de ser perfecta per totes les&nbsp;seves&nbsp;parts) que&nbsp;adquirir-lo per&nbsp;consumir-lo en un mes&nbsp;(la&nbsp;part&nbsp;estreta&nbsp;i&nbsp;m\u00e9s&nbsp;seca,&nbsp;coneguda&nbsp;com&nbsp;a \u201cbabilla o&nbsp;contramaza\u201d ha de&nbsp;tenir&nbsp;una&nbsp;curaci\u00f3&nbsp;\u00f2ptima&nbsp;perqu\u00e8&nbsp;\u00e9s&nbsp;per&nbsp;on&nbsp;comen\u00e7arem&nbsp;el pernil.&nbsp;<\/p>\n\n\n\n<p>&nbsp;Si la&nbsp;part&nbsp;ampla&nbsp;\u2013o \u201cmaza\u201d-&nbsp;est\u00e0&nbsp;una mica&nbsp;tendra, en&nbsp;els&nbsp;dies&nbsp;que&nbsp;anem&nbsp;tallant&nbsp;la \u201cbabilla\u201d&nbsp;s\u2019acabar\u00e0&nbsp;de&nbsp;curar).&nbsp;<\/p>\n\n\n\n<p>Punts ha tenir en compte:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>La canya ha de ser fina i estreta<\/li>\n\n\n\n<li>Equ\u00edvoc \u201cPata negra\u201d<\/li>\n\n\n\n<li>Pes i rendiment<\/li>\n\n\n\n<li>Aspecte visual i textura del greix<\/li>\n\n\n\n<li>Gla, engreix de camp o engreix<\/li>\n<\/ol>\n\n\n\n<p>A l\u2019article anterior trobareu els tres primers punts ben detallats. Ara seguirem amb el quart punt:<\/p>\n\n\n\n<p><strong>4.&nbsp;Aspecte visual i textura del greix<\/strong><\/p>\n\n\n\n<p>El greix concentrat en el lateral de la pe\u00e7a (garreta i \u201cbabilla\u201d) ha de ser brillant i fluida.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"300\" height=\"273\" src=\"https:\/\/moniberic.com\/wp-content\/uploads\/2022\/08\/Sin-titulo-1_Mesa-de-trabajo-1-300x273-1.jpg\" alt=\"\" class=\"wp-image-7450\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>Quan passem el dit per aquesta zona, ha de relliscar sense trobar cap resist\u00e8ncia.<\/p>\n\n\n\n<p>Si intentem introduir el dit en aquesta part, haur\u00edem de poder fer-ho per\u00f2 no de forma profunda, ja que si \u00e9s aix\u00ed ens trobarem davant d\u2019una pe\u00e7a amb m\u00e9s greix del que caldria.<\/p>\n\n\n\n<p>La pres\u00e8ncia de greix \u00e9s normal per\u00f2 amb mesura. L\u2019espatlla sempre en cont\u00e9 en major proporci\u00f3 que el pernil.<\/p>\n\n\n\n<p><strong><strong>5.&nbsp;Gla, \u201ccebo\u201d de camp o \u201ccebo\u201d<\/strong><\/strong><\/p>\n\n\n\n<p>La part inferior (punta) per on la pe\u00e7a va ser separada de l\u2019animal, \u00e9s irregular i groguenca. Si llisquem el dit polze sense massa pressi\u00f3 i observem que s\u2019enfonsa amb relativa facilitat deixant una petjada profunda, podria ser que la pe\u00e7a fos de gla.
