Mai ha d\u2019escalfar-se&nbsp; o llevar-li l\u2019oli.<\/p>\n\n\n\n<p>Si el pernil \u00e9s de sobre i\/o estava en la nevera, ha de treure\u2019s de la nevera&nbsp;un parell d\u2019hora abans perqu\u00e8 adquireixi la temperatura adequada.<\/p>\n\n\n\n<p>En els valors t\u00e8rmics m\u00e9s baixos, el pernil es percep com m\u00e9s salat i&nbsp;de pitjor qualitat arom\u00e0tica que l\u2019acabat de tallar.<\/p>\n\n\n\n<p>Mai s\u2019ha de consumir a menys de 14 graus.<\/p>\n\n\n\n<p>A partir de 14 graus s\u2019aconsegueix el punt de fusi\u00f3 de l\u2019\u00e0cid oleic del greix\u201d, i per tant aquesta major flu\u00efdesa \u201cfacilita l\u2019alliberament dels compostos arom\u00e0tics, amb el que s\u2019incrementa la intensitat i persist\u00e8ncia de l\u2019aroma alhora que el greix recobreix les papil\u00b7les gustatives atenuant la salinitat.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>La conservaci\u00f3 del pernil i el tall d\u2019aquest s\u00f3n elements fonamentals per poder-lo gaudir.
