{"id":6782,"date":"2021-04-29T15:27:00","date_gmt":"2021-04-29T14:27:00","guid":{"rendered":"https:\/\/moniberic.com\/risoto-de-trigueros-y-crujiente-de-jamon-de-bellota-iberico-y-parmesano\/"},"modified":"2023-10-24T16:04:42","modified_gmt":"2023-10-24T15:04:42","slug":"risotto-desparrecs-i-cruixent-de-pernil-de-bellota-iberic-i-parmesa","status":"publish","type":"post","link":"https:\/\/moniberic.com\/ca\/risotto-desparrecs-i-cruixent-de-pernil-de-bellota-iberic-i-parmesa\/","title":{"rendered":"Risotto d\u2019esp\u00e0rrecs i cruixent de pernil de bellota ib\u00e8ric i parmes\u00e0"},"content":{"rendered":"\n<p>Avui us proposem una recepta de risoto, en aquesta farem servir encenalls de pernil de bellota ib\u00e8ric, per\u00f2 podeu fer servir la qualitat que m\u00e9s us agradi.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"300\" height=\"200\" src=\"https:\/\/moniberic.com\/wp-content\/uploads\/2023\/10\/viruta-300x200-1.jpg\" alt=\"\" class=\"wp-image-6773\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Risotto d\u2019esp\u00e0rrecs i cruixent de pernil de bellota ib\u00e8ric i parmes\u00e0<\/strong><\/h3>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p>\u2013 1 manoll d\u2019esp\u00e0rrecs de marge.<\/p>\n\n\n\n<p>\u2013 1 manoll d\u2019alls tendres.<\/p>\n\n\n\n<p>\u2013 4 escalunyes.<\/p>\n\n\n\n<p>\u2013 \u00bd got de vi blanc.<\/p>\n\n\n\n<p>\u2013 1,5l. de brou de verdures.<\/p>\n\n\n\n<p>\u2013 650g. d\u2019arr\u00f2s arbori.<\/p>\n\n\n\n<p>\u2013 100g. parmes\u00e0 ratllat.<\/p>\n\n\n\n<p>\u2013 100g. d\u2019encenall de pernil de gla ib\u00e8ric.<\/p>\n\n\n\n<p>\u2013 2 c. c. de mantega.<\/p>\n\n\n\n<p>\u2013 Oli d\u2019oliva verge.<\/p>\n\n\n\n<p>\u2013 Sal.<\/p>\n\n\n\n<p><strong>Elaboraci\u00f3:<\/strong><\/p>\n\n\n\n<p>Netejar els esp\u00e0rrecs i els alls tendres, tallar-los petitons, reservant algunes puntes d\u2019esp\u00e0rrecs. Picar les escalunyes.<\/p>\n\n\n\n<p>Posar a escalfar el brou en una olla a foc lent.<\/p>\n\n\n\n<p>En una cassola amb l\u2019oli i una nou de mantega, cuinar els esp\u00e0rrecs, els alls tendres i les escalunyes, sense que les escalunyes agafin molta calor, sin\u00f3 pot agafar un sabor amarg. Desglassar amb el vi blanc.<\/p>\n\n\n\n<p>Afegir l\u2019arr\u00f2s i deixar-ho ofegar tres minuts. Anar mullant l\u2019arr\u00f2s amb el brou calent i remoure.<\/p>\n\n\n\n<p>No afegir m\u00e9s brou fins que no s\u2019hagi absorbit l\u2019anterior. Quan l\u2019arr\u00f2s estigui cuit (uns 13\/15 minuts), afegir el parmes\u00e0.<\/p>\n\n\n\n<p>Afegir finalment la mantega.<\/p>\n\n\n\n<p><strong><em>Per al cruixent de pernil de bellota ib\u00e8ric i parmes\u00e0:<\/em><\/strong><\/p>\n\n\n\n<p>Encendre el forn a 180 graus.<\/p>\n\n\n\n<p>Sobre una fulla de silicona per a enfornar i amb l\u2019ajuda d\u2019un motlle rod\u00f3, emplenar la base del motlle amb encenalls de pernil de bellota ib\u00e8ric i el parmes\u00e0 ratllat. Deixar uns 3 minuts i treure del forn.
